SIMPLE GRANOLA BARS

One of our family’s FAVORITE snacks when we’re on the move or on-the-go is a granola bar! But, not only are many LOADED with sugar and additives, but they also come individually wrapped creating instant waste. We urge you to try making your own and seeing just how simple they can be to recreate. Plus, you can easily swap out items and to customize them to your liking. Change out the nuts, or dried fruit, if you prefer. Add a tablespoon or two of nut butter for a creamy treat. Add chia or sunflower seeds for added crunch. It’s all up to you! But the best part? You can grab all these items in the shop!

2 1/2 cups rolled oats
1/2 cup whole almonds, chopped
1/3 cup honey
1/4 cup unsalted butter
1/4 cup light brown sugar
1/2 tsp vanilla extract
1/4 tsp kosher salt
1/4 cup dried tart cherries, chopped
1/4 cup mini chocolate chips

INSTRUCTIONS:

1. Heat oven to 350F and line 9” square pan with aluminum foil and lightly oil.
2. Add oats and almonds to a baking sheet and toast 3-5 minutes until slightly golden.
3. Combine butter, honey, brown sugar, vanilla and salt in a saucepan and stir until butter melts and sugar dissolves.
4. Pour into bowl with roasted oats and almonds. Mix well and cool about 5 minutes. Then add tart cherries and chocolate chips.
5. Transfer to lined pan using spatula and press mixture into the pan firmly.
6. Refrigerate at least 2 hours before cutting into bars.
